Romance in the Kitchen with Blue Apron

Happy Saturday! I hope you’re having an amazingly relaxing weekend! I know I am! My 6-year-old (who is ever the introvert) requested that instead of a party, the family stayed the night in a hotel. We packed one suitcase for the 4 of us and headed to Austin. Mostly, we’re watching movies, swimming in the indoor pool and we can’t wait to eat breakfast in our slippers in the morning! We love cozy times together so this Valentine’s Day, the hubby and I are planning a quiet night in cooking together which is something we did a lot before we had kids. With children, everything from meal planning, shopping to prepping and even serving meals is stressful. When I first met my husband, I was a vegetarian so I chose this Sunchoke and Egg Noodle Casserole to try to win his heart! Everything we needed (minus cook wear and a few basics like salt, pepper and olive oil) come in your delivery.

And some light knife work! We chopped the shallot and sunchoke, tore the stems off the kale and shredded the cheese.

I added olive oil to a pan and cooked the veggie according to the directions (all while boiling the noodles).

Next, I made this delicious sauce!

Then we put everything together in a large pot, then put it in a casserole dish to bake!

We paired this delicious meal with a white wine from our Winc Wine delivery and the hubby was absolutely in love! The casserole was meant to be split in two but it was so filling we had leftovers and the he called dibs on those right away!
